Scrambled Eggs
- 6 eggs
- 3 T ghee
- 3 T water
- 1/2 t sea salt
Melt ghee in small, heavy plain steel frying pan on high heat. Combine eggs, water, and salt and whisk throughly until completely blended and frothy. Heat ghee just to the point of smoking, turn the gas down to medium, and dump in the egg mixture, which should foam up and cook right away. Using a silicone spatula, push cooked egg off the sides and bottom of pan with a gentle scraping motion to let uncooked egg flow in. Continue stirring just enough to keep already-cooked eggs off the hot pan.
