Meatloaf
1 small onion or 1/2 large onion
2 cloves garlic
3-4 pieces wheat bread
1 lb. ground beef
1/2 tsp. sea salt
1 egg
Preheat oven to 350 degrees. Chop the onion and fry in a little oil until transparent.
While the onion is cooking, break the egg into a bowl. Then pulverize the bread in the food processor and add to the bowl with the egg. Pulverize the cooked onion and the garlic, and add to the bowl. Mix in the remaining ingredients, form into a loaf, and bake.
(This is a very simplified and scaled down recipe, based on the one in Julia Child's The Way to Cook.)
Sat, 15 Apr 2006Beef and Pepper Hot Dish
1 lb. pasta (rotini, rigatoni, or macaroni are good)
1 lb. ground beef
1 medium onion, chopped
1 tsp. garlic paste (or real garlic to taste)
2 medium red bell peppers, chopped
1.5 cups marinara sauce
One handful grated Parmesan cheese
Preheat oven to 350 degrees. Start boiling water for pasta and cook the pasta at the same time as the remaining steps.
Brown beef in large skillet. Set aside on paper towels. Drain any excess beef fat more than 2T or so. Cook onion and garlic in remaining beef fat in skillet until onion is almost clear, then add peppers. Cook some more then add marinara sauce. Mix in pasta and put in one large or two small baking dishes. Top with cheese and bake until cheese is crusty on top.
