The other way to do it is :
update-alternatives --config <insert your alternative choice here>
so
update-alternatives --config x-window-manager
to change to metacity and then
update-alternatives --config x-session-manager
to change to gnome.

The debianutils package also provides the
"sensible-[browser|pager|editor]" options that Gnome seems to use by
default.  They use your environment variables first, if defined, the
switch to using x-www-browser in the case of the browser.

There's also a sensible-mda package now which is sort of neat if I still
did my own mail.
